St Andrew’s Day Cheesecake
There are few things that capture the spirit of Scotland quite like gathering round a table to share good food and good stories – and as St Andrew’s Day approaches, we are so delighted to bring you a beautifully patriotic bake from our dear friend and collaborator, the much-loved Hebridean Baker, Coinneach MacLeod.
St Andrew’s Day, celebrated each year on 30th November, is Scotland’s national day and a time for feasts, festivities, and proudly flying the Saltire. To mark the occasion, Coinneach has created a dessert that celebrates Scottish flavour and tradition in every spoonful. Inspired by the bright, zesty sweetness of Dundee Marmalade, this no-bake cheesecake layers a creamy, indulgent filling over a spiced ginger biscuit base, before being finished with the blue and white of our national flag. Simple to prepare yet striking in its presentation, it’s the perfect show-stopper dessert for your St Andrew’s Day table.
St Andrew’s Day Cheesecake
Serves 6-8
Ingredients
For the base:
- 225g (8oz) ginger biscuits
- 85g (3oz) digestive biscuits
- 140g (4¾oz) butter, melted
- Pinch of salt
For the filling:
- 4 tbsp orange marmalade
- 250g (9oz) mascarpone
- 300ml (1¼ cups) double cream
- 2 tbsp icing sugar, sifted
For the decoration:
- 200g (7oz) fresh blueberries
Method
Finely crush the ginger and digestive biscuits using a food processor or rolling pin.
Stir in the melted butter and a pinch of salt until fully combined, then press the mixture firmly into the base of a 20cm springform tin.
Chill for 30 minutes to allow the base to set.
In a large bowl, blend together the marmalade, mascarpone, double cream and icing sugar using an electric whisk until smooth and thickened. Take care not to overmix.
Spoon the filling over the chilled base and smooth the surface with a spatula.
Refrigerate for at least 3 hours, or overnight, until fully set and firm.
To finish, decorate the top with fresh blueberries arranged in the shape of St Andrew’s cross.
Slice, serve, and raise a spon to Scotland!
