Atholl Brose Cheesecake: A Taste of the Highlands

This indulgent Atholl Brose Cheesebake – a luxurious, no-bake dessert inspired by one of Scotland’s oldest and most iconic drinks.
The Story Behind Atholl Brose
Atholl Brose has been a Scottish favourite for centuries. Traditionally made with a creamy blend of whisky, honey, oats, and cream, it’s a drink steeped in legend. One story dates back to the 15th century, when the Earl of Atholl is said to have captured his enemies by spiking their water supply with a mixture of whisky, oats, and honey – and the concoction became a Highland tradition that’s endured ever since.
This recipe gives the classic drink a modern twist, transforming it into a rich, smooth cheesecake that pairs perfectly with a wee dram and good company. It’s Scottish heritage and indulgence on a plate.
The Hebridean Baker’s Atholl Brose Cheesecake Recipe
This no-bake cheesecake is creamy, light, and beautifully flavoured with whisky and honey. It’s the perfect dessert to impress guests – or to savour all by yourself with a cup of tea or a splash of Atholl Brose.
Serves: 6-8
Ingredients
Atholl Brose:
- 250ml whisky
- 70g porridge oats
- 3 tsp Scottish honey
- 40ml double cream
Cheesecake:
- 100g butter
- 250g digestive biscuits, crushed
- 600g cream cheese
- 35ml prepared Atholl Brose
- 100g icing sugar
- 300ml double cream
- 100g dark chocolate, grated
Method
Make the Atholl Brose
Soak the oats in the whisky overnight, covered. The next day, strain through a muslin or clean tea towel, squeezing out every drop. Discard the oats. Gently warm the honey, then whisk it into the whisky along with the cream. Chill for at least 4 hours before using.
Prepare the base
Melt the butter in a saucepan and stir in the crushed digestive biscuits until fully coated. Press the mixture firmly into the base of a lined 18cm springform tin. Chill for 1 hour to set.
Make the filling
In a mixing bowl, whip the cream cheese until smooth and fluffy. Beat in the prepared Atholl Brose and icing sugar. In a separate bowl, whip the double cream to soft peaks, then fold it gently into the cream cheese mixture along with the grated chocolate. Spoon the mixture onto the chilled biscuit base and smooth the top with a spatula. Chill for at least 2 hours until set.
Serving Tip
Top your cheesecake with an extra drizzle of Atholl Brose or a dusting of grated chocolate before serving. Pair with a wee dram of whisky for the ultimate Highland indulgence.
